In May of 1995, Jean-Michel Bergougnoux transformed Le Comptoir into a charming, authentic brasserie-restaurant — L’Absinthe was born.

Jean-Michel has worked to create what is described by many as “The most authentic French brasserie-restaurant experience in New York” and, Zagat Guide mentioned L’Absinthe as the “Top spot Brasserie” in Manhattan.

All of Jean-Michel’s training and expertise culminate in L’Absinthe’s innovative French fare. Food here is fresh and uncomplicated, yet backed up by thorough classical techniques. Jean-Michel’s authentic dishes boast of their classic Brasserie roots, while incorporating his unique creativity.
