David Werly is an internationally recognized culinary executive with more than three decades of experience leading luxury hospitality operations across the United States, Europe, and South America. Throughout his career, he has successfully combined Michelin-starred culinary excellence with strategic business leadership, overseeing some of the world’s most prestigious hotels, integrated resorts, and fine dining establishments.
Born and raised in Alsace, France, David developed his culinary foundation in one of France’s most celebrated gastronomic regions before refining his craft in some of Europe’s most prestigious Michelin-starred kitchens. During his formative years, he trained alongside numerous Meilleurs Ouvriers de France (MOF), Bocuse d’Or laureates, and internationally acclaimed Michelin-starred chefs. His classical training includes the legendary Ritz Paris – L’Espadon, Le Pré Catelan in Paris, The Square in London, Alian Ducasse Monte’s Club in London, as well as several renowned Michelin-starred restaurants throughout his native Alsace.
His distinguished career as a Leader includes executive leadership positions with Fontainebleau Las Vegas, Virgin Hotels Las Vegas, ARIA Resort & Casino, Mandarin Oriental Las Vegas, The Forbes 5 star Setai Hotel in Miami Beach, and the internationally acclaimed Le Cirque at Bellagio, where he led the restaurant in earning and maintaining a Michelin Star for four consecutive years.
During his tenure as Property Culinary Director at Mandarin Oriental Las Vegas, David worked closely with legendary French chef Pierre Gagnaire, overseeing the culinary execution of Pierre Gagnaire’s only restaurant in the United States.
As a proud member of the Maîtres Cuisiniers de France, David remains committed to preserving the traditions of French gastronomy while embracing innovation and advancing the profession through education, mentorship, and leadership.
Outside of his professional life, David finds inspiration in the outdoors. He enjoys snowboarding, mountain biking, hiking, and climbing, and is an avid traveler who loves discovering new cultures and cuisines. Together with his wife, he enjoys exploring the world and spending time with their two beloved French Bulldogs, Leon and Zoe
