Biography

Native of the southwest France, Didier began is culinary career by training under renowned Chef Patrick Henriroux La Pyramide 2 Michelin Star in Vienne and Alain Ducasse 3 Michelin Star Le Louis XV In Monaco.
After receiving his credentials, Didier spend seven years mastering his craft with the luxury hotel & restaurant group Relais & Chateaux.
In 2005, he joined the Intercontinental Hotel Group in Mexico City and in 2009, relocated to Intercontinental Buckhead Atlanta to lead the Helm as Executive Chef.
From Ireland to Cap Town, Seychelles Island, Bora Bora, Mexico City or Atlanta Didier has always the same objective of spreading the fame of the French cuisine and teaching and sharing his passion for culinary art to young professionals.
Didier believes that the best dishes are made with quality ingredients, simple techniques, and natural flavors, emphasizing that once a recipe is over-complicated the flavors become masked.
Didier’s signature ingredients reflect his upbringing in France and include truffles, tarragon, olive oil and Foie gras.
